Traditional Ramadan Day 16 Iftar Menu

A heartwarming and classic Iftar menu for the 16th day of Ramadan. Lentil soup, Turkish white bean stew with meat (Kuru Fasulye), rice pilaf, and Sekerpare dessert recipes are here.
 
 
Red Lentil Soup (Homemade Style)
 
Method: Sauté onion, potato, and carrot in butter. Add washed red lentils and 6 cups of water. Simmer for 25 mins until soft. Blend until silky smooth. Serve with a drizzle of butter and red pepper flakes.
 
White Bean Stew with Beef (Kuru Fasulye)
 
Method: Soak 3 cups of white beans overnight. Sear 300g cubed beef, add chopped onion and 1 tbsp tomato paste. Add the beans and 5 cups of hot water. Simmer on low heat for 45 mins until tender but intact.
 
Şekerpare (Semolina Cookies in Syrup)
 
Method: Prepare and cool the syrup (3 cups water, 2.5 cups sugar). Knead a dough with butter, 1 egg, 1/2 cup semolina, powdered sugar, and flour. Shape into rounds and bake at 170°C until golden. Pour cold syrup over the hot cookies immediately. Rest for 2 hours.
