Ramadan Day 3 Iftar Menu

A light yet satisfying Iftar menu for the 3rd day of Ramadan. Broccoli soup, baked meatballs and potatoes, and Revani recipe with all the details are here.

Broccoli Soup (Serves 6)

  • Ingredients: 1 medium broccoli, 1 potato, 1 onion, 1 clove garlic, 1 tbsp butter, 1 tbsp flour, 5 cups hot water/veggie stock, 1 cup milk, salt, pepper.

  • Method: Sauté onion and garlic in butter. Add flour and roast for 1-2 mins. Add chopped broccoli and potatoes with water. Cook for 20 mins. Blend until smooth, add milk, season, and boil for 3 more mins.

  • Tip: Don't overboil the broccoli to keep the vibrant green color.

Baked Meatballs & Potatoes (Family Tray)

  • Meatballs: 500g ground beef, 1 grated onion, 1/2 cup breadcrumbs, 1 egg, garlic, cumin, salt, pepper. Knead well and rest for 15 mins.

  • Method: Slice 3 potatoes into rounds and place in a tray. Shape the meatballs and place them on top. Mix 1 tbsp tomato paste, 1.5 cups hot water, and oil; pour over the tray. Bake at 190°C for 35-40 mins.

Revani (Semolina Cake with Syrup)

  • Method: Boil 2 cups sugar and 2.5 cups water for 10 mins; add lemon juice and cool. Whisk 3 eggs and 1 cup sugar. Add 1 cup each of yogurt, oil, semolina, and flour. Add baking powder and vanilla. Bake at 180°C for 30 mins. Pour cold syrup over the warm cake.
