Ramadan Crowded Family Iftar Menu

A bountiful and satisfying Iftar menu for large families. Ezogelin soup, baked Izmir meatballs, rice pilaf, and biscuit cake (Petibör) recipes are here.
 
 
Ezogelin Soup (Large Pot Portion)
 
Method: Sauté onion in butter. Add tomato and pepper pastes. Stir in 1.5 cups red lentils, 3 tbsp bulgur, and 2 tbsp rice. Pour in 10 cups of hot water. Cook for 30 mins. Add mint and cumin at the end. Blend partially for texture.
 
 
Izmir Meatballs (Tray Bake)
 
Method: Knead 1kg ground beef with onions, eggs, and breadcrumbs. Shape into long ovals. Slice 5 potatoes. Arrange potatoes and meatballs on a tray. Pour over 2 cups of water mixed with 2 tbsp tomato paste. Top with peppers and tomatoes. Bake at 200°C for 45 mins.
 
 
Petibör Biscuit Cake (Layered Pudding)
 
Method: Prepare a basic cocoa pudding (or custard). Dip petibör biscuits in milk and line them in a large tray. Spread a layer of pudding. Repeat for 3-4 layers. Top with extra pudding and let it rest in the fridge for 3 hours.
