Strained Lentil Soup (Restaurant Style)
Method: Sauté diced onion, carrot, and potato in butter and oil. Add washed red lentils and 6 cups of water. Simmer until soft (20 mins). Blend until silky smooth. In a separate pan, lightly roast 1 tsp of flour and add to the soup for consistency. Serve with butter-fried red pepper oil.
Roasted Chicken Drumsticks (Golden Brown)
Method: Marinate 6 drumsticks in a mix of yogurt, tomato paste, olive oil, garlic, and paprika. Rest in the fridge for 2 hours. Arrange over sliced potatoes in a tray. Bake at 200°C for 45-50 mins until crispy and golden.
Aromatic Rice Pilaf (İç Pilav)
Method: Sauté pine nuts in butter, then add currants and soaked rice. Roast for 3-4 mins. Add cinnamon, allspice, salt, and hot water. Simmer on low heat and let it rest (demleme) for 15 mins.
